The Green Mill is an artisanal sourdough bakery that makes real bread slowly and naturally. We are proud to be able to provide our community healthy sourdough bread with great taste, texture, and aroma.
Our dough is made with:
A blend of whole wheat & un-bleached flours.
Natural sourdough starter
Sea salt
Mineral spring water.
Our flours contain no improvers, stabilizers, or enzymes.
We kneed, fold, proof, & shape our dough over a period of sixteen
hours. This develops the complex tastes & breaks down the gluten
proteins for much better digestion & nutrients absorption. You can
read our story.
We also highly recommend watching this video which
gives a nice overview of sourdough bread.
